How Deliveroo leveraged IDP and Source-to-Pay to transform its global invoicing process

UK-based food delivery service Deliveroo has eliminated significant invoice-handling inefficiencies through AI-powered Intelligent Document Processing (IDP) from Rossum, originally headquartered in Czechia.

The software automates data extraction from invoices, purchase orders and key finance documents, according to Procurement and Supply Chain Director Rob Turner. It also complements the organization's new Source-to-Pay (S2P) solution from Coupa. S2P is the industry term for strategic procurement, as distinct from the more transaction-oriented Procure-to-Pay.

Quantifiable gains

Since Rossum went live in April 2025 after extensive preparation, Deliveroo has achieved a 23-fold efficiency gain in invoice processing with 97.6% reading accuracy.

In practice, all invoices are now processed through email, with IDP classifying and routing them automatically. The AI extracts data, transforms it, matches invoices against purchase orders, checks for duplicates, and posts invoices into the S2P system - with Stripe handling final payments.
